Fried Okra is crunchy and can be served as side dish with rice and curry or as a starter.
This is made in goa during veggie days to replace fried fish.
Ingredients:
5 Okra/lady finger/bhendi
1 tsp roasted coriander sed powder
2 tbsps coarse rice powder
1 tsp chilly powder
¼ tsp turmeric powder
1 tsp salt
Oil for shallow frying
Method:
Wash and clean Okra and make them dry before you cut them to avoid stickiness.
Cut into 3 inch long pieces. Cut each piece into half.
Apply salt, coriander seed powder, chilly powder and turmeric powder.
Mix well. Heat griddle /frying pan and smear with a little oil. Roll okra slice into flour and arrange on griddle.
Add 3 to 5 tsp oil and fry until light brown.
Turn the slices over add little more oil and fry till browned.
Serve as starter or side dish with rice and curry.
