Wash the mussels well before taking them out of the shells, pry open and retain the flesh. Discard the shells. You get cleaned mussels in the market which is more convenient. Chop the tomato, onion, chillies, garlic and the mussels finely. Heat oil in a pan, add the chopped onions and sauté till they are soft. Add the chillies and garlic. Fry for 2-3 minutes. Add the chopped tomato and cook for 3-4 minutes. Add the mussels and the vinegar. Add salt. Stir fry till the mussels are tender. Serve hot.
