Turmeric ginger pickle

Turmeric ginger pickle is good for diabetic people. It also helps digestion. 

Ingredients 
Fresh Turmeric (ताज़ी हल्दी)1 cup
Ginger (अदरक) 1/2 cup
Green chillies हरी मिर्च)
Lemon Juice (नींबू का रस)1 tbsp
Salt to taste नमक स्वादानुसार
Gingelly oil (तिल का तेल )1 tsp
Mustard seeds (राई) 1 tsp
Fenugreek seeds (मेथी) 1/4 tsp
Asafoetida (हींग) 1/4 tsp

Method
Clean turmeric, green chillies and ginger with water. 
Make sure it is dry.
Peel off the skin and cut into thin slices. 
Add to the bowl. 
Add salt and lemon juice and mix well. 
Take a pan and keep on low medium heat. 
Add oil when oil is warm add mustard seeds.
When mustard seeds start spluttering add fenugreek seeds and Asafoetida. 
Put off the gas flame to prevent burning. 
Once seasoning tadka is cooled down add it the tuermeric, ginger, green chillies mix. 
Mix well. Store in an airtight container. 
Store it at room temperature for 5-6 hours so all the spices are absorbed the turmeric and ginger. 
Store it in the fridge. 

** You can add crushed black peppers and garlic for added spicy flavour.
