How to make moringa curry

3 Drumstick , cut into 3 inch pieces and steamed
3 सरगवानु सिंग
1/2 cup Gram flour (besan) roasted 1/2 कप बेसन
1 cup Yogurt (Curd) 1 कप दही
1/4 teaspoon Asafoetida (hing) 1/4 चम्मच हिंग
¼ teaspoon Turmeric powder ¼ चम्मच हल्दी पाउडर
1 tbsp crushed ginger, green chillies 1 चम्मच कुचल अदरक, हरी मिर्च
1/2 teaspoon Red chilli powder ½ चम्मच लाल मिर्च पाउडर
1 tspn roasted cumin seed powder
चम्मच जीरा पाउडर
1/4 teaspoon Mustard seeds १/4 छोटा चम्मच राई
1/4 teaspoon Cumin seeds १/4 छोटा चम्मच जीरा
3-4 Curry leaves 3-4 कड़ी पत्ते
1 tablespoon Cooking oil or ghee 1 चम्मच तेल या घी
Salt , to taste नमक स्वादानुसार
corriander leaves for garnishing धनिया पत्ते




1. Wash and cut the drumsticks in to 3 inch pieces
2. Boil 2 cups of water and add drumstick pods. Cook until tender. You can also cook in pressure cooker for 1 whistle. Do not throw away the water that was used to boil the drumsticks because it is full of vital nutrients and acts as a stock for the recipe. Add salt when they are almost cooked.
3. Roast gram flour besan for 4 to 5 minutes on low hear.
4. Prepare a batter of curd and besan of medium consistency. Add spices like turmeric, cumin jeera, powder, red chilli powder and salt and mix well using a beater so that there are no lumps.
5. In a kadhai heat oil or ghee and make a tampering of mustard seeds. Once mustard seeds crackle add add curry leaves, cumin seeds, chopped ginger and green chilli.
6. Now add the curd and flour batter. Cover and cook for 4-5 minutes.
7. Next add the boiled drumsticks along with the water that was used to boil it.
8. Cover and let simmer for another 10 minutes.
9. When done garnish with coriander leaves
10. Serve when hot with chapatti or bhakhri or rice.
Yogurt should be little bit sour for the traditional Guajarati taste of this curry.
Add salt to drumsticks when they are almost cooked to avoiding breaking drumsticks. If you add salt in the beginning they will break.
